It takes several days to have everything in place for a special occasion. The last few hours are critical, challenging and exhilarating all at once. We are tired by then, but also uplifted by the atmosphere of camaraderie and from the anticipation of taking part in a festive moment, being of service and witnessing people sit back, relax and enjoy a special meal in good company; a moment away from their daily routine.
We have a ritual of sorts. During the last moments, after hours of hard work, the chef brings out a few appetizers for the crew to nibble on. This sharing of a few bites further sets the mood.
