Serves 4… unless everyone wants seconds, in which case it serves 2. We’d go with the second scenario if we were you!
Suggested Ingredients –
4 eggs
1/4 cup milk (or more if desired)
2 tomatoes, sliced
1 cup sliced mushroom
Salt and pepper to taste
1 tbsp olive oil
1 FREE small cheese pizza (JPD’s Tuesday night special)
Instructions –
1 – Beat the eggs. Add milk. Mix.
2 – Heat oil in skillet over medium-high. Pour in the eggs. Reduce heat to medium. Heat until set and edges begin to turn golden.
3 – Turn off heat. Transfer to a dish and cross-cut in 4 slices.
4 – Divide egg on 4 pizza slices. Layer mushroom and tomatoes on top. Or any other veggie of choice.
5 – Top with remaining pizza slices, face down.
6 – Heat a griddle to 350 degrees. You can also use a large pan over medium heat. Griddle until crust turns golden and the cheese bubbles.
7 – Serve with a fruit salad on a bed of greens.
Variation: Try it with sun-dried tomatoes and fresh basil.
Another variation: Half the assembled Pizzanwich slices (lengthwise) into 8 slices to serve along with a buffet.
