Our Spinach & Artichoke Dip is one of the most requested appetizers when we cater events. We must confess that it is one of our favorites as well. Here is an interesting variation for tasty, elegant bites you can easily serve as a first course or add to a buffet style table, depending on the atmosphere you wish to create. Serves 6 to 8.
16 oz can artichoke hearts
1/2 cup grated Parmesan
1/4 red onion, finely chopped
1/3 cup real mayonnaise
Ground peppercorn to taste
1- Turn on the broiler.
2- Cut baguette into bite-size slices. Place a single layer of slices on a baking sheet.
3- Drain artichokes hearts and empty onto a towel to absorb extra liquid. Then, cut into small pieces.
4- In a medium bowl, mix artichoke hearts, Parmesan, onion, mayonnaise and pepper.
5- Spoon equal amounts of the artichoke mixture onto each baguette slice.
6- Broil until topping is bubbly and begins to brown lightly. About 2 minutes.
