This recipe is a summer favorite that lends itself perfectly to impromptu gatherings. It lets you add variety to your table without costing much at all.
Even among friends, you want your table to have that extra touch for a special gathering. This has nothing to do with showing off your hosting skills, and everything to do with letting your friends know that you care to pamper them with extra attention to detail. Plus, it’s fun to dress up a table when you know who will soon be gathering around it sharing laughs and forgetting about small and big troubles for a while.
The subtle combination of tastes and textures is amazingly delightful too, for something that simple. While we used a baguette, go ahead and try your own variations with any of our breads.
Ingredients:
1 baguette, sliced
2 onions, sliced thinly
3 cups sliced fresh mushrooms
2 teaspoons olive oil
Sea Salt to taste
Pepper to taste
2 cups shredded Cheddar or Mozzarella
3 medium tomatoes, sliced
Preparation:
Preheat oven to 350°. Warm olive oil in a large skillet. Add onions and mushroom and sauté until tender. Add salt and pepper to taste. Heat 1 minute more.
Place baguette slices on a baking sheet. Top with a bit more than half the cheese, followed by with onion and mushroom mixture. Then, add a tomato slice. Sprinkle liberally with remaining cheese.
Bake until cheese is melted, 10 to 15 minutes. Sprinkle with with fresh, chopped parsley or basil if desired.
Presentation: Serve on a large tray, making a circle around other styles of bites.
Variation: Add a slice of ham or thin pepperoni before the first layer of cheese.
