The daily repeated motions of the cook or chef are not as simple as they seem, and surely never futile. Every cell of every muscle responds and comes to task. Here a sprinkle of cheese. There the perfect sweep of the hand to dress the fresh dough with a blanket of aromatic sauce. Every order for a new dish carries a promise of nourishment and pleasure. Hungry folks at the table already imagine the taste. The chef already knows how everything must come together. Time is suspended in that moment when one awaits and one prepares. This moment, before the actual dish arrives, is the playground of the imagination when anticipation begins to diminish the concerns of the day. It is life itself that we remember how to taste in those moments. Then we can eat.
